Description
Paccasasso (*Crithmum maritimum) grows on the cliffs of the Adriatic, clinging to the rocks where sea meets land. A wild herb with an intense aroma — marine, herbaceous and lightly aniseed notes — traditionally gathered in the Marche region and transformed into a distinctive seasoning.*
Our preserved vegetable is made through a simple, respectful process: paccasasso (44%) “blanched” in white wine and wine vinegar, then preserved in extra-virgin olive oil. No artifices, just the true character of an ingredient not found everywhere.
Ideal on bruschetta, with fresh cheeses, alongside grilled meats or for adding character to a pasta dish. A product that tells the story of its land — and makes it instantly recognisable.
